Tinawon Fancy is a Fair Trade rice grown in the famous rice terraces on the northern Philippine island of Luzon. It has a mild, nutty flavor, and a white, brown-speckled hue. Tinawon Fancy has a fragrant popcorn-like aroma when cooked. Plump and short-grained, its big kernels and flavor lend Tinawon Fancy perfectly to a variety of flavors and dishes. Locally known as Imbu-ucan, Tinawon Fancy is the treasured variety of high elevations farmers in the municipalities of Banaue and Hingyon. With a slight pink or brown cast, Tinawon Fancy is noted for its taste and texture, mild aroma and fast cooking qualities.
Hand planted, hand picked, and hand processed, just as it has for thousands of years, Tinawon Fancy is naturally grown. Although not yet certified as such, Philippine rice was organic before organic became a trend.
The terraces where the rice was grown were carved out of the hillside by Ifugao tribe people around 2,000 to 3,000 years ago, without the aid of machinery. The terraces stretch for nearly 4,000 square miles, and provide level steps where he natives can plant rice and vegetables. Crops are fed by an ancient irrigation system from the
rainforests high above the terraces. Some of the slopes the terraces are built on slant at a nearly 70 degree angle.
Tinawon Fancy is distributed by Eighth Wonder, a company dedicated to preserving the traditional Filipino rice farmers’ way of life, heirloom varieties of Philippine rice, as well as the historic terraces of the Philippines.

It’s not only delicious, but it’s also helps sustain heirloom rice varieties and the famous Philippine rice terraces.
Preparation and Cooking Instructions
Stove Top: Wash rice vigouously 2 to 3 times in cold water, or until water runs clear. Bring 1-1/2 quarts water or stock to a boil. Add 2 lb. sleeve of Tinawon Fancy Rice, Indian Harvest, 2 Tbsp butter or olive oil (optional), (4 oz.) seasoning packet (optional) and stir. Cover tightly and return to boil. Reduce heat and simmer. Cook for 15 minutes. Let rest covered for 5 - 10 minutes until rice is tender or desired texture is achieved.
Hold in steam table for serving or chill for later service. Reheat by sautéing with any of your favorite herbs, spices and vegetables. YIELD: 32 1/2 cups.
