Preparation and Cooking Instructions: Stove Top: In a saucepan bring 2-1/2 quarts (10 cups) water to a boil. Slowly add lentils while stirring to keep from sticking. Reduce heat to a simmer. Cook for approx. 5 minutes until lentils are firm but cooked through. Do not over cook. Remove from heat, drain excess water and rinse with cold water. Season with salt to help retain color and shape. Hold chilled until ready to serve. NOTE: After cooking and chilling, Lentils may be reheated by saute method with fresh herbs, aromatic vegetables or curry, reheated quickly in a convection steamer, microwave, or add to rice blends. Yield - 12 cups
