Israeli Couscous with Cashews and Fresh Herbs
Ingredients
1 1/2 pounds Indian Harvest Israeli Couscous or Golden Jewel Blend
4 ½ cups chicken stock
1 cup diced onions
1 1/2 cups diced red, yellow or orange bell peppers (all 3 together if possible)
1 cup chopped cashews
4 teaspoon fresh chopped thyme
4 teaspoon fresh chopped oregano
1 tablespoon cumin
½ cup olive oil
black pepper to taste
Directions
Heat olive oil in a large skillet; add diced onions and sauté over medium heat until onions are almost transparent. Add Israeli Couscous or Golden Jewel Blend and sauté until lightly toasted in color. Add the chicken stock and diced peppers and bring to a boil, then reduce to a simmer. Add cumin and pepper to taste. Cover and let simmer for 8-10 minutes or until most of the chicken stock is gone. Remove from heat and stir in chopped cashews, fresh thyme, and oregano before serving.
Yield: 24 ½ cup servings
