Preparation and Cooking Instructions: Basic Risotto Recipe: ¼ cup extra virgin olive oil 1 medium onion, chopped 2 pounds Indian Harvest Carnaroli 1 ½ cups dry white wine 2 quarts chicken broth (reserve hot) 1 cup grated Parmesan cheese 2 tablespoons butter Salt to taste

Heat olive oil in large stock pot and add onion. Saute onion until translucent, add Carnaroli and continue to sauté while stirring for an additional 2 minutes. Add white wine while and stir for one minute. Start adding 2 cups of stock at a time, while stirring continuously until stock is gone or until desired texture. Rice should have al dente texture when finished, add more stock if rice is undercooked. Stir in parmesan and butter, add salt to taste (optional). For wild rice and mushroom risotto, try adding 2 cups wild mushrooms and 1 ½ cups Indian Harvest Early Harvest Wild Rice (previously cooked). Yield: About 12 Cups
