Basmati Blend Polynesian Summer Salad
Ingredients
2 pounds Indian Harvest Basmati Blend
8 cups chicken or turkey, diced
32 ounces canned pineapple chunks
4 cups green grapes, halved
2 cups salted cashews, coarsely chopped
lettuce leaves, for garnish
Dressing:
mayonnaise
chutney, chopped
salt
Directions
Prepare the rice medley according to package directions. Toss cooked medley with chicken, pineapple, green grapes, and nuts. Stir in mayonnaise with chutney and salt. Carefully toss dressing into salad. Cover and chill. Serve on lettuce.
Yield: About 35 ½ cup servings
