Basmati Blend Pilaf with Mushrooms, Spinach and Pimento
Ingredients
- 2 pounds Indian Harvest Basmati Blend
- 1 cup fresh mushrooms, chopped
- 4 shallots, finely chopped
- 8 tablespoons margarine or butter
- 6 cups chicken broth
- 2 cups dry white wine or apple juice
- 2 cups celery, chopped
- 8 cups spinach leaves, torn
- 4-2 ounces pimiento, diced & drained
Directions
Cook shallots in margarine or butter till tender. Add basmati blend and stir the shallot-rice mixture over medium heat for 2 minutes or till rice is light brown. Pour in chicken broth and the wine or juice; add the chopped mushrooms and celery. Bring mixture to boiling; reduce heat. Cover and simmer mixture for 20 minutes or till rice is tender and liquid absorbed. Stir in the torn spinach and pimiento. Serve pilaf
immediately.
