Basmati Blend Curried Salad
Ingredients
- 2 pounds Indian Harvest Basmati Blend
- 2 green pepper, chopped
- 5 cups celery, sliced
- 2 bunches green onion, chopped
- 1 bunch parsley, chopped
- 1 cup chives, chopped
- 1 cup mint, snipped
- 1/2 cup dill
- 2 tablespoons salt
- 2 1/2 cups olive oil
- 1 cup lemon juice
- 1 cup red wine vinegar
- 1 tablespoon dijon mustard
- 1 tablespoon curry powder
Directions
Prepare the rice medley according to package
directions. Combine medley with green pepper,
celery, green onion, parsley, chives, mint, dill, and
salt, tossing gently to mix well. Combine the olive oil
with the lemon juice, vinegar, mustard, and curry
powder for dressing. To serve, toss the dressing into
the medley mixture and spoon onto lettuce leaves.
Serve with cherry tomato or tomato wedge.
Yield: About 40 ½ cup servings.
