Ancho Cilantro Black Pearl Medley Salad
Delicious Accompaniment to a Tex Mex Meal
Ingredients
- 2 pounds Indian Harvest Black Pearl Medley
- 1 Cup Black Beans
- 1 1/2 Cup Roasted Corn
- 2 Cups Simplot Flame Roasted Peppers and Onions
- 1/2 Bunch of Cilantro, Chopped Fresh
- 1 1/2 Cups Heilmann's Anch Cilantro Ranch Dressing
- Salt to Taste
Directions Cook Indian Harvest Black Pearl Medley according to package directions, and cool immediately. Combine all ingredients and chill. Adjust salt and dressing as needed before serving.
**Variations**
Try adding Grilled Shrimp or Chicken, or make a great wrap with the addition of romaine and avocado! Replace the 2nd, 3rd and 4th ingredients with Simplot's Flame Roasted Corn and Black Bean Fiesta.
