Preparation and Cooking Instructions: Stove Top: For existing recipes follow instructions as usual. Prepare as follows for general application. Rinse and sort through beans, removing any unwanted material. Pour boiling water over to cover by 4 inches. Let soak one hour. Drain water from soaking beans. Add fresh water to cover by 4 inches and bring to a boil. Cover. Reduce heat to simmer and begin checking for doneness at 25 minutes. When tender drain water and cover with cold water to cool. Add to any recipe as directed or rice blends, broth soups, fresh vegetables, salads or pasta. YIELD: 24-1/2 cup servings.
